How the Dough Proofing Estimator works

The method
Fermentation rate roughly doubles every 8-10 °C, and desired dough temperature is hit by adjusting the water to compensate for flour temperature and mixing friction.
water temp = (DDT × 3) − flour temp − room temp − friction factor
For a 26 °C target with 22 °C flour, 22 °C room and 3 °C friction: (26×3) − 22 − 22 − 3 = 31 °C water, adjusted up slightly for a cold bowl.
FAQ
Why control dough temperature rather than room temperature?
Because the dough is what ferments. Flour temperature, water temperature and the heat generated by mixing all contribute, and controlling the water is the practical lever.
What is the friction factor?
The temperature rise from mixing, which depends on your mixer and mixing time — typically a couple of degrees by hand and more with a machine. Measure it once for your setup and reuse it.
Should I trust the time or the dough?
The dough, always. The estimate tells you when to start checking. Rise, dome and the feel of the gluten are what say it is ready, and they vary with flour, hydration and starter activity.
