A perceptual conversion weights green more heavily than red and blue because human vision is more sensitive to green luminance.

What is the difference between grayscale and pure black and white?
Grayscale preserves shades between black and white. One-bit black-and-white conversion removes those shades and can lose detail in photos and charts.
