Why is a fan oven set lower than a conventional oven?

A fan/convection oven circulates hot air, cooking food faster and more evenly, so recipes typically drop the set temperature by about 20°F (10-20°C) compared to a conventional oven.

What is gas mark?

Gas mark is a UK oven temperature scale used mainly on gas ovens, roughly corresponding to specific Fahrenheit and Celsius values — for example gas mark 4 is about 350°F/180°C.

Should I always convert, or just estimate?

For most baking a rough 20°F/10°C adjustment for fan ovens works, but exact conversion matters more for temperature-sensitive bakes like bread and pastry.
